Introducing Old Perth Amontillado: A Limited Edition Worth Savouring
Old Perth Amontillado is our new limited edition, matured in first-fill Amontillado sherry casks.
Launched on 5 June 2025, this release is a standout for whisky enthusiasts and sherry cask aficionados alike—offering a distinctive character and a richly satisfying experience.
Why Amontillado?
At Old Perth, we’ve always championed the richness and depth that sherry cask maturation brings to whisky. But with this release, we have explored a different side to that spectrum — one that’s less about dark dried fruits and sweetness, and more about structure, elegance, and savoury complexity.
Unlike Oloroso or Pedro Ximénez, Amontillado sherry is aged in two phases: first biologically under a layer of flor (like fino), then oxidatively (like oloroso). The result? A beautifully dry and nutty profile, with notes of hazelnuts, almonds, dried apricot, and amaretti biscuits.
These casks aren’t used often in Scotch whisky maturation — which is exactly why we felt this was the perfect opportunity to do something different.
Inside the Cask: What Makes This Release Special
For Old Perth Amontillado, we created a bespoke blend of Speyside single malts — many distilled using traditional worm tub condensers — selected for their naturally rich and savoury character. We blended these with a component from our Solera system, a process we’ve developed to maintain balance and depth in our whisky.
That whisky was then laid down in first-fill European oak Amontillado sherry butts and hogsheads for nearly three years of additional maturation in our warehouse at Aberargie. A final marrying period in more Amontillado casks brought cohesion and harmony before bottling.
The result is a whisky that delivers on all fronts — dry, nut-forward, beautifully structured, and bottled at a bold 52.8% ABV, with no chill-filtration and retaining its natural colour.
Limited Availability
This is a small-batch release, drawn from just 9 hogsheads and 6 sherry butts, so it’s not one to wait on. With an rrp of £58.00, we’ve aimed to keep it accessible for anyone curious about what Amontillado casks can bring to Scotch.
Old Perth Amontillado will be available in the UK, EU, and select international markets from 5 June 2025.

To celebrate this launch, we’ve teamed up with two brilliant Spanish restaurants — Rioja (Glasgow) and Tapa (Edinburgh) — to bring you the Sherry Trail.
Throughout June, these venues will be offering Old Perth tapas pairings, allowing you to enjoy our sherry-matured whiskies with carefully curated dishes that bring out their depth and complexity.
Even more exciting — we’re hosting an exclusive event at Rioja, Glasgow, featuring guided whisky tastings and tapas pairings, including Old Perth Amontillado.
